It has been a while since I did a food post. While I am waiting for more signs of Spring that just seem to be taking a while to arrive, I thought I would share some of our “new” favorite dishes! Not all of them might be healthy, but they all certainly are delicious!
Homemade Mac and Cheese
This recipe has both cheddar and parmesan cheese, lots of milk, and sprinkled with a generous amount of toasted panko breadcrumbs with a dash of paprika! Yum! It has become a favorite during the cold days of winter or when a family member needs to miss our mealtime. The recipe makes a lot but it does not last long! The serving dish becomes empty very quickly!
Seared Pork Chops
w/ Sauteed Balsamic Onions & Raisins
This dish is easy and delicious! The sautéed balsamic onions and golden raisins are make the plate in my opinion. The tartness of the balsamic vinegar with the sweet raisins and aroma of onions are so delicious. I think I could eat just those and forgo the pork! Still, a keeper of a recipe! My youngest son and husband agree…I don’t think I’ve served it to my other boys yet, but as soon as we are all together, this will be a go to dish for sure!
Red Velvet Cupcakes
More than cooking, I love to bake and make candies. It has been years since I made a batch of cupcakes. So, when Valentines Day rolled around this year, I made some Red Velvet cupcakes! Admittedly, I used a box for the cake mix. But, I did make my own frosting, as I prefer it to any store-bought kind. And, yes, I put anise flavoring in the sweet, sugary topping as well! These were fun to make and serve as dessert to friends who had come for dinner. On the downside, I had forgotten how many cupcakes come from a box! But, definitely a treat worth sharing!
I find myself in the mood to bake today…..I wonder what it will be????
